Eco-Friendly, All-Natural and Hand-Harvested Ingredients Add Spice to Barhyte’s New Lords of Salts Collection

Pendleton, OR – (February 8, 2008)– There’s no place like home, especially when crafting a new line of organic artisan salt. This is why Suzie “Saucy Mama” Barhyte turned to her own back yard in creating the company’s new “Lords of Salt” artisan sea salt collection.

Bound with flavors of the Pacific Northwest, these new gourmet sea salts embody the region’s ideal, being hand-harvested using ecologically sound practices. The coveted crystals that serve as Barhyte’s foundation have been certified as organic by Nature et Progres (France) and also have received Slow Food Award for the Defense of Biodiversity.

Eric Stubenberg, a preeminent authority on salt who approached Barhyte with his Lords of Salt concept, manages the company’s sourcing to ensure that the main ingredient is the most pure sea salt available. He also created the artisan process that liquefies and transforms the crystals into something far more rich and complex than so-called “infused” salts.

“Many of today’s gourmet salts have been either smoked, or smoked-and-mixed with particles from the flavor source,” he explains. “Our process takes the artisan step of true creation: binding flavors together rather than layering them on top of each other. It’s evident in the final product’s color, aroma, and more than anything, its taste.”

Teaming with Barhyte’s “Saucy Mama” to craft and hone the line’s flavors, Stubenberg and Barhyte’s Lords of Salt line includes:

- Hazelnut Sea Salt: According to the U.S. Hazelnut Council, Oregon is the single largest grower of hazelnuts in the United States. Deep and rich, these Oregon hazelnuts are smoked in regional alder and married to the sea salt, leaving chipped bits of hazelnut meat in the mix. This woody combination proves extraordinary sprinkled over pork tenderloin.

- Pinot Noir Sea Salt: Oregon’s own Adelsheim Vineyards – one of Oregon’s more than 300 fine local wineries – lends complex flavors and a beautiful purple hue, to accentuate meat and wild game dishes with a splash of color and full-bodied flavor.

- Chardonnay Sea Salt: Like its richly flavored sibling, salt features crisp flavor from locally grown Chardonnay grapes, delivering a hint of fruit to the taste profile. Sprinkle on breads, salads, and fruit, as well as fresh or grilled vegetables or chicken.

- Chocolate Sea Salt: Intensely smoky, savory, and creamy flavors make this salt stand out. Add to salads, rim drinks, enhance contemporary desserts, and use with gusto top of grilled meats.

- Serrano Lime Sea Salt: Bright lime and warm Serrano pepper come together, mellowed with light alder smoke and complex minerality. This blend adds a new dimension to tropical drinks and Bloody Mary’s, as well as any number of fabulous seafood dishes including grilled shrimp and sea scallops.

- Olive Sea Salt: As the official licensee to the Tanqueray brand of cocktail olives and onions, Barhyte’s knowledge of fine olives runs deep. This expertise translates beautifully to its Olive Sea Salt, offering a fruity richness and complexity that makes a lively combination. It makes an irresistible accompaniment to crusty bread and olive oil, as well as with bright greens and vinaigrette, or garlic roasted lamb.
